Pindi Chole - A Tantalizing North Indian Delight

Ingredients: Chickpeas (Kabuli Chana) Onions Tomatoes Garlic,Ginger Spices (Coriander, Cumin, Red Chili Powder, Amchur, etc.) Oil, Salt

Soak the chickpeas in water overnight or for at least 6-8 hours. This helps soften them and improve texture.

Drain the soaked chickpeas and pressure cook them until tender, about 2-3 whistles.

In a pan, heat oil and sauté onions until golden brown. Add garlic, ginger, and spices. Sauté until fragrant.

Add chopped tomatoes and the cooked chickpeas to the spice mixture. Simmer for 10-15 minutes, stirring occasionally.

Adjust seasoning with salt and amchur (dry mango powder). Garnish with coriander leaves.
